A note for the chef

The counter has one inbox and it is read by a person, not a queue: chef@catsushi.org.

Good notes for this address: a broken link on the menu, a price that looks stale, a question one of our guides did not answer, or a correction from someone who knows katsuobushi better than we do — those we take with genuine gratitude.

Notes better sent elsewhere: anything about a specific order (Amazon's Your Orders page can see your parcel; we cannot) and anything about your cat's health (your veterinarian outranks any chef, including this one).

We answer within a couple of days, usually faster. If it is 3 a.m. and the bag crinkle has summoned the cat, you may also simply tell us about it — the kitchen enjoys those letters most.
